Coconut Flour Chocolate Chip Cookie Cakes

I’ve recently started to experiment with coconut flour because of all the awesome benefits it has that most of the alternatives don’t! After many a failed attempt at different recipes(there’s certain rules to follow with coconut flour, here are some tips) these were one that I was very pleasantly shocked by. They taste delicious! They taste like a chocolate chip cookie, not some kind of healthy pretender. The only difference is that they come out as a little bit more cake ish in their consistency.. This didn’t seem to bother any of the people that ate them all up right away though. So, to the point.. try a coconut flour chocolate chip cookie, they’re good! Enjoy:)

What You Need for the Coconut Flour Chocolate Chip Cookie recipe


1/4 Cup Coconut Flour
2 Eggs
3 Tbsp Coconut milk
12 Dates
1 Tsp Vanilla
1/2 Tsp Baking soda
1/4 Tsp Salt
1/4 Cup Semi Sweet/Dark Chocolate Chips

What to Do

These are so easy to make! Before starting:

Pre heat oven to 350 degrees
Optional: soak dates in hot water(they blend a little easier)

-In blender/food processor:
Blend dates until they’re shredded up then add coconut flour and blend until it is mixed together well(there will probably be small date pieces that didn’t completely blend, you won’t notice after baking).

-Next add the vanilla, salt and baking soda to the mix and keep blending. If you have a big enough food processor/blender you can then add the eggs and coconut milk and have everything nice and blended together. I have a small food processor so mixed in the coconut milk and eggs by hand after blending the other ingredients together.

-Mix in chocolate chips by hand

-It works best to make these pretty small and flat when putting them on the pan, not huge mounds of dough or they may take a while to cook and the edges might burn.

-Bake for 12-15 minutes depending on how big you make the cookies.
