Easy Tangy Avocado Dressing

If you follow my Instagram or Snap story you already know, I am a big fan of giant salads! It’s pretty much a staple for me at lunch. The main reason being, you can mask the taste of veggies that you don’t really want to eat with more delicious things. Like this avocado dressing or these Healthy Hot Chickens. So really it’s a win – win situation. You get to eat something tasty and you get your veggies in so you can be healthy and strong! (not to mention salad cleans your veins! *Not true! But never stopped my dad from saying it when we were growing up :D)

I wanted to share a dressing because I get asked what kind of dressings I use or buy. I don’t use store bought dressing much. If I’m at a restaurant and I know I love the dressing (I mean have you had Mellow Mushroom’s Greek salad??) I’ll just eat it because it’s not often and it’s something I enjoy. Generally, when making salads at home I just use something like this or an oil and vinegar variation. I like to steer clear of a lot of dressings because they’re canola oil or soybean oil based and both of those are usually heavily GMO’d and less than stellar for you oils. Not to mention the added sugar and other preservatives and chemical that I can barely read in some store bought dressing. Soo I try to do the little healthy things where I can and just make my own 2 minute dressing.

This dressing is super easy to make and you don’t need anything too crazy! It’s a thicker dressing, I wanted to call it a vinaigrette but apparently that’s not allowed if it’s a thick, creamy dressing. Ugh! So here we are with this dressing that I hope you love!

 

What You Need for Tangy Avocado Dressing:

You’ll need a blender or food processor (honestly if you don’t mind it not being silky smooth you can hand mix it).

2 Avocados

1/3 Cup Lemon Juice (it took me 2 large lemons)

2 Tbsp Avocado or Olive oil (depending on taste preference)

1 Tsp Garlic Powder

1/4 Tsp Sea Salt

1/4 Tsp Pepper

1/4 Cup Water (you can add more water if you want it to be even less thick, just add to desired consistency)

 

 

How to Make Tangy Avocado Dressing:

Remove the skin and pit from both avocados and put in processor.

Squeeze the lemon juice into a measuring cup and add it to the processor. Be careful to catch or pick out the seeds here. They’re a little hard to see in the lemon juice!

Add water, oil, salt and pepper to processor and process until everything is really well mixed.

If it’s still a little too thick for you, feel free to add more water! Store in the fridge in an airtight container!

You can use this on whatever your heart desires! I’m thinking I may give it a try on some salmon soon.
