Two food post in a row is more than unusual for me but I’m pretty excited about this one soo I promise a workout post is coming next!
Peanut butter and chocolate are just one of those amazing combinations that make life better! But usually the delicious desserts and candies involving these 2 are chock full of processed sugar, chemicals and pretty much just a giant list of ingredients that no one in the real world can pronounce. But I’m happy to say, not this time!:) These peanut butter cups are made with a few simple and beneficial ingredients that make living a healthy life a little bit tastier!
Chocolate:
1/4 Cup Coconut oil
1/3 Cup Honey
1/3 Cup Cocoa/Cacao
1 Tsp Vanilla
Filling: So, if you want this to be even easier you can buy some natural(hopefully no sugar added) peanut butter at the store and use it for the filling! If you want to make your own here’s what you’ll need
2/3 Cup Peanuts
1- 1.5 Tsp Coconut oil(don’t go too heavy here or you’ll feel the oil when eating them later)
Before staring the how, you can do this over the stove or in the microwave.. I’m going to explain microwave but the instructions are the same besides the amount of time to cook the ingredients and you can see them as they melt on the stove!
Filing:
-Crush and blend the peanuts in the food processor/blender until you can tell they aren’t breaking down any more.
-Then add your 1.5 Teaspoons of coconut oil(melted in microwave for about 15 seconds) and continue to blend until the mixture looks smoother. It isn’t going to be as smooth as store bought but you’ll be able to see a difference after adding the coconut oil.
-Leave it to sit while making the chocolate.
Chocolate:
-Melt your coconut oil in the microwave for about 1 minute. You may want to check and see how it’s doing around 40 seconds just to make sure it’s still got some left to melt(who knows if my microwave works exactly right!)
-Add honey to warm coconut oil.. these aren’t going to mix. So just immediately add the vanilla and cocoa/cacao powder and start stirring. At first it will seem like it’s not going to mix well but it does after a few minutes of stirring!
-After you’ve made your chocolate and filling, grab your molds/ mini cup cake tins.. whatever you want to make them in(I would line them or do something so they come out easy if it’s a cupcake tin). You’re going to pour a bottom layer of your chocolate mix in(should only use about half of your mix). It was really easy to just ladle it out with a regular old spoon.
-Put this layer int he fridge for about 15 minutes or until it looks hard enough to hold the peanut butter filling.
-Add on peanut butter filling and then use the rest of the chocolate mixture to cover each piece.
-Refrigerate until solid! This won’t take too terribly long, another 30 minutes to an hour. Make sure to store them in the fridge if your house may be near 76 degrees because coconut oil melts there!
