My Favorite Easy Granola Recipe

Here’s a super easy, 2 ingredient granola recipe that has become my favorite! It’s customizable and the only sweeter involved are dates which gives this granola a boost of fiber and potassium among other things! It’s a great alternative for those who aren’t huge fans of honey! What You’ll Need:

12 Medjool Dates

2 Cups of Oats

Optional: You can add in anything that you would usually have in your granola. So things like nuts, seeds, ground flax, chia seeds, coconut etc. Get creative and add things you love!

I usually do about a 1/4 cup of each when I add things in! (If you add too many different things you may want to add an extra date or 2)One of my favorite combos is:

1/4 cup ground flax, hemp, chopped up almonds, pumpkin seeds and sunflower seeds!

What To Do:

Pre heat your oven to 325 degrees F.

Soak your medjool dates for about 5 minutes in hot water.

Process or blend your dates until they’re a thick paste. If you need to, add some of the water they were soaking here to help blend. Just be sure not to make it too watery! You want a thick, sticky date paste.

Put your oats and whatever else you want in the granola mix in a large bowl. If you add things besides oats mix everything up.

Mix the dates into the dry ingredients – I start with a fork but you may need to use your hands as shown below! It’s a little sticky but makes the mixing a lot quicker!

20160627_194323Spread out the oats out thinly on a pan and bake for 8-10 minutes. Take it out and stir the granola around before baking it for another 5 minutes. Be sure to check that it doesn’t burn!
